The Summer of Gazpacho

The word on the street this summer is that people are a little, a lot, burnt out when it comes to food shopping, food prepping and kitchen duties. Sure, in late winter and early spring it was fun learning to grow our sourdough scoobies, and expanding our culinary techniques. But summer’s here, and we want easy-peasy recipes that can be packed up for beach and park picnices, leaving very tiny messes in our wake. We’ve scoured the internet for you, and found a theme we think you’ll love as much as we do: all things gazpacho! Here’s 3 recipes that are going to be our go-tos this year.

The gorgeous colour of this gazpacho recipe on Bon Appetit’s website will make it one of our summer faves this year: Cucumber-Tomatillo Gazpacho.

Tomato season is here! Have an abundance of Roma tomatoes you’re looking to use up without turning on a burner of the stove? Try this Authentic Gazpacho Recipe.

With little chance to travel abroad this year, we’re satiating our wanderlust with endless Google searches for international flavours. We can’t wait to try this: Mexican Avocado Soup.

PRO TIP
Although gazpacho is a popular dish, when you google the word, you only get 27 million hits, but when you Google “chilled soup” you get 776 million hits! To expand your search results try these searches: “cold soup”, “sopa fria”, “gaspacho”. Although “gaspacho” is not the correct spelling, you’ll still get some good results.
