Canada Day, Fresh Fruit and Berry Stains's featured image

Canada Day marks more than just the birth of our nation. For kids, it’s the kick-off to summer vacation; for adults, it typically brings the warm weather we’ve dreamed about all winter.  But, above all, it’s a three-day weekend.  So, kick off your shoes and celebrate!  Invite the gang over for a BBQ and raise a glass to this beautiful country with an iconic Canada Day dessert.  No, not strawberry shortcake.  This year give Kraft’s Canadian Flag Cake a try, it’s a real show stopper!  Recipe and link below.

Canadian Flag Cake by Kraft Canada

Ingredients:

1 pkg. (298 g) prepared pound cake, cut into 12 slices

2 cups boiling water

2 pkg. (85 g each) Jell-O Strawberry Jelly Powder

3 cups ice cubes

3 cups sliced fresh strawberries, divided

2 cups thawed Cool Whip Whipped Topping

Method:

  1. Cover bottom of 13″ x 9″ dish with cake slices; set aside.
  2. Add boiling water to jelly powder in large bowl; stir 2 min. until completely dissolved.  Add ice cubes; stir 3 to 5 min. or until ice is melted.  Remove any unmelted ice.  Stir in 1 cup strawberries; pour over cake.  Refrigerate 15 min.  Cover with Cool Whip.

Refrigerate 4 hours or until jelly is firm.  Arrange remaining berries over dessert to resemble the Canadian flag.  Click here for a maple leaf template and detailed instructions.

PRO TIP: Fresh fruit on Canada Day doesn’t have to leave you tattooed with berry juice.  If you pick your own, your fingers and your helpers’ fingers may become too stained to remove with just soap and water.  The answer: wash your hands with undiluted lemon juice.  Wait a few minutes, then wash again with warm, soapy water.  Repeat if necessary until the stain is completely gone.
